Inventory remains

Although the kitchen is closed for the rest of 2016, we are in town and have inventory remaining.  If you're in a pinch and need some last minute meals, we are happy to help. 

We are continually updating our inventory once orders are filled so our web's inventory page should be up to date and accurate.

This Week's Mini Menu

Our last week in the kitchen for 2016 is a mini menu featuring three delicious entrees. A friendly reminder, too, the kitchen will be closed for (at least) the last two weeks of December. Stock up your freezer now and enjoy the holidays the way they were meant to be -- stress free making memories with your family.

Mongolian Beef 


Delicious cuts of beef in a savory, rich brown sauce slow cooked to perfection. Top with a sprinkling of freshly cut green onions and serve on a bed of steamed or fried rice. You know, come to think of it - this would be awesome served with broccoli, too. However, broccoli and the slow cooker don't play well together so, if you'd like to go the extra mile... I'd suggest stirring in the freshly steamed broccoli just before serving.  


Dr. Pepper Pulled Pork

An awesome rub, a hunka pork, some syrupy sweet soda and a slow cooker. I'm not sure your day can get much better than that. (Okay, we know it can but work with me here.) Let your slow cooker do the work. This meat will be fork tender and at that point, you get to work out your aggression with some forks as you shred the meat. Then, everyone reaps the reward! Once you shred this bad boy up, serve it on some buns and you are done! You are going to be a hero! Seriously, why don't you just put a cape on your Christmas list. (Oh, and don't tell your kids that this cut is actually called a "pork butt" because, if they're like mine, discussion is over and we'd be ordering a pizza! Regardless of the cut's name it IS actually just a pork SHOULDER, but it's more fun to say butt, but since that's not polite -- enjoy your slow cooked Dr. Pepper pork booty.  Who are we kidding?  Just say it... gross your kids out.  Some of us live for these opportunities!)


Stuffed Shells

Jumbo pasta shells stuffed with a delicious combination of Italian cheeses including ricotta and mozzarella covered with a flavorful marina sauce and topped with a generous portion of mozzarella because.... cheese! This is a crowd-pleasing, easy weeknight dinner. Add a Caesar salad and some garlic knots and I'm sure there will be empty plates all around your dinner table.

Next Week's Menu -- Orders due Sunday, 12/4

Next week we have some delicious creations for your family to enjoy.  Knowing we have the holidays coming up and the kitchen will be closed for two weeks in December, Anchored Blessings is using this week as another FULL menu week (a full SEVEN entree menu) so that our customers can stock up their freezers and enjoy the holidays the way they were meant to be -- stress free making memories with your family.

King Ranch Chicken 


This Tex-Mex casserole reigns king of all others (see what I did there?) and is a staple at any family gathering or potluck.  Why? It never fails to please!  Gooey cheese, tender shreds of chicken, layers of corn tortillas, the zest of the Southwest spice blend mixed with green chilies, bell peppers, diced onions... it has it all.  Personally, I think it's even better the SECOND day -- though good luck having any leftovers!  I love mine served with a side of black beans and some Spanish rice with a big dollop of creamy sour cream on top.  


Pizza Pasta Bake


For those who are tired or ordering pizza but still want that delicious, savory treat -- we've kicked it up a notch!  This layered pasta dish is your meat lover's dream -- in a pan!  Layers of al dente pasta, zesty marinara sauce, gooey mozzarella cheese, with a hint of Parmesan.  It includes ham, Italian sausage and topped with (of COURSE) the end-all-be-all of kid pleasing pizza toppings -- pepperoni!  This casserole is then cooked up to a bubbly, delicious, ooey, gooey, mouth-watering, they-will-all-ask-for-seconds, cheesy goodness!  Serve with a simple mixed salad and some garlic breadsticks.


Slow Cooker Santa Fe Chicken


Chicken breasts slow cooked then shredded in your crock pot with corn, tomatoes and black beans - very flavorful and healthy.  Best served in a bowl over rice though I like to wrap them up in heated flour tortillas with some fresh guacamole, shredded lettuce and a handful of cheese -- we can make our own version of those loaded burritos!  Enhance this Southwest slow cooker meal with some creamy sour cream, freshly chopped cilantro, diced green onions or a big handful of Monterrey Jack cheese.


Sloppy Joe Sliders

Simply stated, these aren't going to last.  There are never seconds when these are served.  I have to hide mine in order to even partake in the sanctity of our family mealtime around the table.  Why?  They are just that good.  They almost turn my children into mutes.  Why?  There is no conversation with as they're too busy stuffing their faces!  Happy kids = happy momma!  This savory, saucy, homemade sloppy joe mix is warmed in your slow cooker all day then added to slider rolls, topped with cheese (optional, of course) and baked until crisp.  From there, it's kind of like feeding the alligators.... just set the food down and stand back (oh, and please make sure they're not wearing white).  We serve ours with a side of sweet relish and some crispy kettle chips... that super salty crunch is an essential piece of the happiness.


Creamy Chicken Pesto Pasta

Delicious chunks of white meat chicken swimming in a pan of al dente pasta that has been seasoned with *the most amazing* alfredo pesto combined with a bit of diced tomatoes and fresh baby spinach.  {Stand by just a minute, I need to wipe the drool off my chin.}  If THAT wasn't enough, it's topped with Italian bread crumbs and a sprinkling of Parmesan cheese to bake up to a creamy, dreamy bowl of Italian goodness.  


Bacon-wrapped Pork Tenderloin

Two gently seasoned juicy pork tenderloin wrapped with bacon strips just waiting to be baked to a crispy perfection.  These are fantastic served with some scalloped potatoes or paired with delicious, buttery cinnamon apples slow cooked in your crock pot!  Want the recipe for the cinnamon apples?  Like us on Facebook!  It was shared there.


Company Chicken


A staple of Southern households for generations, Company Chicken combines dried beef slices with chicken breasts in a creamy sauce for a hot, protein-rich truly unique flavor of the south.  Serve over hot buttered egg noodles, mashed potatoes or even rice with a side of baked garlic broccoli or steamed veggies.




BONUS **Chocolate Lasagna


This is a full pan four layer dessert that is a chocolate lover's dream.  A thick, buttery, sweet dark cookie crust is your bottom layer.  Next comes a sweetened cream cheese layer with a hint of vanilla.  Then, that is topped with a richly thickened chocolate pudding layer followed by a fluffy whipped topping and then sprinkled with a generous portion of mini chocolate chips because... well... because we can!  And, because we can -- we SHOULD!  I mean, chocolate chips y'all!  Mini ones!  They make everyone happy.  They make ME happy.  Chocolate chips for EVERYONE!
