New Weekly Menu Is Live



This week's menu features kid-friendly and customer-favorites. Plenty of family favorites that help you keep your cool while it's still hot outside! Face it -- it's hot enough outside without heating up the kitchen every night to use your oven so we've incorporated a couple of favorite slow cooker meals too!  Let that work horse do all the work while you enjoy the A/C!

Ready, Set, Go!


This week's menu is now live! Orders placed by Sunday, March 26 at 6 pm will be prepared and ready for pick up Thursday, March 30-Saturday, April 1.  Please note that orders are due no later than 6:00 pm on Sunday.  The order form will be deactivated once we have reached capacity or by 6:00 pm (whichever comes sooner).  If you miss the deadline, have no fear as we generally do work extras into our preparations so there will likely be inventory available for purchase.

This week's entrees are:

* Delicious Salmon *

Salmon fillets marinated in a perfectly blended combination of spices with salty soy sauce and sweet brown sugar.  These go from freezer to table quickly. Serve with wild rice and sautéed fresh green beans almondine.


* King Ranch Chicken *

This Tex-Mex casserole reigns king of all others (see what I did there?) and is a staple at any family gathering or potluck.  Why? It never fails to please!  Gooey cheese, tender shreds of chicken, layers of corn tortillas, the zest of the Southwest spice blend mixed with green chilies, bell peppers, diced onions... it has it all.  Personally, I think it's even better the SECOND day -- though good luck having any leftovers!  I love mine served with a side of black beans and some Spanish rice with a big dollop of creamy sour cream on top.  


* Pizza Subs *

Busy moms can't get enough of these stuffed subs! Crispy bread loaves loaded with zesty Italian sausage, plenty of pepperoni and gobs of mozzarella cheese. The ultimate super easy weeknight meal. You can cook them from frozen or thawed for a delicious dinner on-to-go for your entire family! 


* Zesty Slow Cooker Chicken BBQ *

Hearty chicken breasts slow cooked in a zesty sauce and covered with a rich barbecue sauce.  Once they're done cooking, you shred them and serve them on rolls... or you could just grab a fork and eat it right out of the crock pot.  We won't judge.  Toss a bag of crinkle fries in the oven and call it a day!  Or, if you want to embrace your need for more color on your plate, toss together a fresh batch of cole slaw as a side.  Better yet, top your sandwich with some...but don't forget the crinkle fries because... it's just fun to say.  


* Slow Cooker Creamy Ranch Pork Chops with Potatoes *
For those busy night when you need dinner ready but know your schedule is full, enter the busy-mom kitchen workhorse -- the slow cooker! These pork chops and potatoes are swimming in a creamy sauce loaded with good old-fashioned ranch flavor. This would be most excellent with some flaky buttermilk biscuits and a garden salad.

Delicious Salmon

Poppyseed Chicken Casserole 



Creamy, dreamy, crunchy, chicken-y comfort food. Nuff said! Throw this on top of a bowl of rice, a hearty scoop of noodles or just eat it out of the pan! I feel compelled to suggest the addition of something of the vegetable-ish sort, although, I'm perfectly content with just my bowl of chicken goodness. A good companion would be oven roasted brussel sprouts. 



Chicken Pot Pie 


Classic chicken pot pie made with a mixture of chicken breasts, potatoes, peas, and carrots in a homemade white sauce. Cooks from frozen so it's great for when you've forgotten to thaw something. Our #1 seller! No need to serve this with anything except a big tall glass of sweet tea! Comfort food at its finest. 



Mexican Lasagna 


This is not your traditional lasagna, just a fun, festive take on the idea of layers - Mexican style! We start with a base layer of crispy corn tortilla chips and cover that with a seasoned ground beef / pinto bean mixture that's loaded with all the traditional Mexican flavors. We add a layer of shredded fiesta cheese and then, because that's not good enough, we do it all again. Top with a dollop of sour cream, some pico de gallo or maybe even a heaping spoonful of guacamole and you've got yourself a big plate of happiness. Forget the drive through for taco Tuesday -- you've got dinner covered!

New Menu is Live!


Anchored Blessings is back in the kitchen for the new year with some requested favorites and a couple of new dishes for your family to enjoy!  Orders are due Sunday, January 15 for pick up January 19-21.  We are so glad to be back and look forward to seeing you all soon!
