This Week's Entrees

Grandma's Chicken and Rice Bake 



 This dish is quickly becoming one of our customers' favorites! Chunks of white meat chicken, vegetables and rice baked in a creamy cheese sauce and topped with a crunchy bread topping. It has a different seasoning than our chicken pot pie but it's equally as delicious and definitely as filling. I think this casserole will be one you want to order again and again for your family. 


Cheese Manicotti 


 Manicotti pasta stuffed with a delicious combination of Italian cheeses including Parmesan, ricotta and mozzarella covered with a flavorful marina sauce which serves as a crowd pleasing, easy weeknight dinner. Add a Caesar salad and some garlic knots for happy plates all around your dinner table!


Baked Potato Soup 



All the flavors of your traditional loaded baked potato come together in this comfort food staple. It's simply perfect for winter days when you don't want to cook but know you have to eat. Do you ever think to yourself, "Didn't I just feed my kids yesterday??? And I have to do it again? Sheesh!" We are full throttle into the new year which means, of course, that things are back to their hectic crazy pace. Enter the slow cooker to the rescue! Seriously, this kitchen workhorse should come with a cape! With the crazy comes the need for comfort. Does anyone have a day where you DON'T want a big bowl of yum topped with some cheese and bacon? I didn't think so! Guess what -- we've got you covered! Throw this in the slow cooker. Don your fuzzy pj's and tell everyone to keep their fingers out of the cheese and bacon bits! It'll be worth the wait. Top with some freshly diced green onion and a dollop of sour cream (or non-fat Greek yogurt -- SO MUCH less fat, more protein, same taste) and call it a day. You're welcome -- mic drop!

Inventory

Thank you to everyone for your orders this week.  It felt great to be back in the kitchen. We got to make some favorites, some new dishes and had lots of fun in the process!  As always, please feel free to let us know your thoughts and ideas on our dishes.  We love feedback!  We have an EVALUATION FORM HERE that you're welcome to fill out if you thought anything was exceptionally good or if there was something that didn't quite meet your expectations.
We have some items in inventory (just click the word to be taken to the page). If you want to add anything to your next order -- be sure to e-mail, text or use our contact form to reserve those.  Inventory requests are filled on a first come-first served basis.  Next week's menu will be posted shortly!

Delicious Salmon


Salmon filets marinated in a perfectly blended combination of spices with salty soy sauce and sweet brown sugar. These go from freezer to table quickly. Serve with wild rice and sautéed fresh green beans almondine. 



Poppyseed Chicken Casserole 



Creamy, dreamy, crunchy, chicken-y comfort food. Nuff said! Throw this on top of a bowl of rice, a hearty scoop of noodles or just eat it out of the pan! I feel compelled to suggest the addition of something of the vegetable-ish sort, although, I'm perfectly content with just my bowl of chicken goodness. A good companion would be oven roasted brussel sprouts. 



Chicken Pot Pie 


Classic chicken pot pie made with a mixture of chicken breasts, potatoes, peas, and carrots in a homemade white sauce. Cooks from frozen so it's great for when you've forgotten to thaw something. Our #1 seller! No need to serve this with anything except a big tall glass of sweet tea! Comfort food at its finest. 



Mexican Lasagna 


This is not your traditional lasagna, just a fun, festive take on the idea of layers - Mexican style! We start with a base layer of crispy corn tortilla chips and cover that with a seasoned ground beef / pinto bean mixture that's loaded with all the traditional Mexican flavors. We add a layer of shredded fiesta cheese and then, because that's not good enough, we do it all again. Top with a dollop of sour cream, some pico de gallo or maybe even a heaping spoonful of guacamole and you've got yourself a big plate of happiness. Forget the drive through for taco Tuesday -- you've got dinner covered! 



Pizza Subs 


Busy moms can't get enough of these stuffed subs! Crispy bread loaves loaded with zesty Italian sausage, plenty of pepperoni and gobs of mozzarella cheese. The ultimate super easy weeknight meal. You can cook them from frozen or thawed for a delicious dinner on-to-go for your entire family! 


Slow Cooker Creamy Ranch Pork Chops with Potatoes 


For those busy night when you need dinner ready but know your schedule is full, enter the busy-mom kitchen workhorse -- the slow cooker! These pork chops and potatoes are swimming in a creamy sauce loaded with good old-fashioned ranch flavor. This would be most excellent with some flaky buttermilk biscuits and a garden salad.

New menus are coming!


The Anchored Blessings team is working on some delicious menus to help this new year start out on the right foot for you and your family.
