Ladies and gentlemen, the kitchen is open! We are now accepting orders for next week's menu and it's five entrees of AWESOMENESS!
This week's menu is now live! Orders placed by Sunday, April 2 by 6 pm will be prepared and ready for pick up Thursday, April 6 - Saturday, April 8. Please note that orders are due no later than 6:00 pm on Sunday. The order form will be deactivated once we have reached capacity or by 6:00 pm (whichever comes sooner). If you miss the deadline, have no fear as we generally do work extras into our preparations so there will likely be inventory available for purchase. Please note, too, the kitchen will be closed the week after Easter so now is a great time to stock up!
This week's entrees are:
* World's Best Lasagna *
The sauce makes this dish! Layers of lasagna noodles in a deliciously simmered homemade meat sauce featuring layers of a creamy ricotta cheese blend and tender noodles topped with a layer of mozzarella. Serve with a Caesar salad and a loaf of sourdough bread with a side of extra virgin olive oil with freshly cracked black peppercorns.
*Authentic Louisiana Red Beans & Rice *
This tried and true recipe for red beans and rice is loaded with Cajun seasonings. It's more like a stew full of andouille sausage, kidney beans, and of course the “holy trinity” of ingredients: bell peppers, celery, and onion. Serve over steamed rice... and if you want to really make it authentic, add a dash or two of Tabasco sauce in each bowl. This makes a terrific one-dish Sunday supper, Cajun-style.
* Garlic Parmesan Pork Chops *
These savory pork chops come out juicy, tender, and are complimented wonderfully by the Parmesan and garlic. This great dish can stand alone without needing a sauce or gravy to flavor it (though, we DO understand that this IS Texas and sometimes you just want to cover everything in gravy. We won't judge you if you do!) You can easily complete this plate of comfort food awesomeness with a side of creamy, garlic cheddar mashed potatoes and some buttery green peas.
* Swedish Meatballs *
Another slow cooker customer favorite. Savory all-beef meatballs simmered in your slow cooker in a rich brown cream gravy. These are best served over egg noodles or rice. A perfect compliment would be a side of broiled broccoli. Sure to be a family favorite for sure!
* Nacho Everyday Beef Enchiladas *
These are not your everyday beef enchiladas... or, stated differently, nacho everyday beef enchiladas. See what I did there?I love nachos. But, then again, there's not much that can top Taco Tuesday... unless it's Enchilada EVERYDAY! (I just made that up. I think it could catch on though, don't you?) Mexican food is so versatile and we could literally eat it every single day! Why oh why can't cheese and flour tortillas be good for you? WHY?! (It's worth noting, however, that we have created a lighter-than-usual Asian inspired dish on this week's menu so I say INDULGE your inner enchilada monster one night and then lighten up on the next (or not, but that's between you and the scale!) This pan of enchiladas is full of a deliciously seasoned beef and black bean mixture which is then rolled up in flour tortillas and covered with a Mexican meat blend. If that wasn't enough we top it with some shredded cheddar cheese and a sprinkling of black olives. Why? Because cheese makes everything awesome and black olives can be picked off by kids who have determined that they're not truly an edible food but for those of us who know better, they add that little edge of saltiness that makes Mexican food good. This dish would be fantastic served along some fresh guacamole, a huge bowl of queso (cause, cheese... mmmmm) and some Spanish rice. Or, if you're feeling really festive, homemade margaritas. I'll take mine on the rocks with salt thankyouverymuch. Ole!
* Slow Cooker Orange Chicken *
This is a lighter version of the traditional dish which typically calls for breaded and fried chicken. Tender chunks of chicken slow cooked in a savory orange sauce just waiting to be served on a plate of steamed rice. This would be excellent alongside a bag of freshly steamed veggies, too or you could even toss them into your wok for a quick stir fry to serve alongside this bowl of Asian inspired saucy deliciousness. This may warrant spring rolls... and crab rangoon... perhaps some pot stickers. Okay... let's face it... we need to hit Costco before this so we can just have a feast that would put Chinese New Year celebrations to shame. But, let's skip the fortune cookies... since... ya know... this is supposed to be healthified and all.
* Queso Chicken & Rice Bake *
Because we love Mexican food, we had to include this delicious, cheesy, Mexican-y concoction for you this week too. Okay, I'll admit, it's really for me, but, it's for you TOO... maybe a little. Okay, maybe I just wanted an excuse to make more Mexican food... BUT it's for the greater good. Work with me here... because -- CHEESE y'all. Queso and rice and chicken and yum! This creamy, cheesy chicken casserole is packed with delicious queso, rice, green chiles (for that extra kick) and a hint of taco seasoning to give it that authentic Mexican flair. The only thing that will make it better would be if you were to invite me to dinner... and not ask me to do the dishes... or why I went ahead and served myself seconds before anyone else was able to serve themselves firsts. I mean, when queso is involved - - it really IS every man, woman and child for themselves!
