The Kitchen Is Open



Ladies and gentlemen, the kitchen is open!  We are now accepting orders for next week's menu and it's five entrees of AWESOMENESS!

This week's menu is now live! Orders placed by Sunday, April 2 by 6 pm will be prepared and ready for pick up Thursday, April 6 - Saturday, April 8. Please note that orders are due no later than 6:00 pm on Sunday. The order form will be deactivated once we have reached capacity or by 6:00 pm (whichever comes sooner). If you miss the deadline, have no fear as we generally do work extras into our preparations so there will likely be inventory available for purchase. Please note, too, the kitchen will be closed the week after Easter so now is a great time to stock up! 

This week's entrees are:


* World's Best Lasagna *
The sauce makes this dish!  Layers of lasagna noodles in a deliciously simmered homemade meat sauce featuring layers of a creamy ricotta cheese blend and tender noodles topped with a layer of mozzarella.  Serve with a Caesar salad and a loaf of sourdough bread with a side of extra virgin olive oil with freshly cracked black peppercorns.  


*Authentic Louisiana Red Beans & Rice * 
This tried and true recipe for red beans and rice is loaded with Cajun seasonings. It's more like a stew full of andouille sausage, kidney beans, and of course the “holy trinity” of ingredients: bell peppers, celery, and onion. Serve over steamed rice... and if you want to really make it authentic, add a dash or two of Tabasco sauce in each bowl. This makes a terrific one-dish Sunday supper, Cajun-style. 


* Garlic Parmesan Pork Chops *
These savory pork chops come out juicy, tender, and are complimented wonderfully by the Parmesan and garlic. This great dish can stand alone without needing a sauce or gravy to flavor it (though, we DO understand that this IS Texas and sometimes you just want to cover everything in gravy.  We won't judge you if you do!)  You can easily complete this plate of comfort food awesomeness with a side of creamy, garlic cheddar mashed potatoes and some buttery green peas. 


* Swedish Meatballs *
Another slow cooker customer favorite. Savory all-beef meatballs simmered in your slow cooker in a rich brown cream gravy.  These are best served over egg noodles or rice. A perfect compliment would be a side of broiled broccoli.  Sure to be a family favorite for sure!


* Nacho Everyday Beef Enchiladas *
These are not your everyday beef enchiladas... or, stated differently, nacho everyday beef enchiladas.  See what I did there?I love nachos.  But, then again, there's not much that can top Taco Tuesday... unless it's Enchilada EVERYDAY!  (I just made that up. I think it could catch on though, don't you?) Mexican food is so versatile and we could literally eat it every single day! Why oh why can't cheese and flour tortillas be good for you? WHY?! (It's worth noting, however, that we have created a lighter-than-usual Asian inspired dish on this week's menu so I say INDULGE your inner enchilada monster one night and then lighten up on the next (or not, but that's between you and the scale!)  This pan of enchiladas is full of a deliciously seasoned beef and black bean mixture which is then rolled up in flour tortillas and covered with a Mexican meat blend. If that wasn't enough we top it with some shredded cheddar cheese and a sprinkling of black olives.  Why? Because cheese makes everything awesome and black olives can be picked off by kids who have determined that they're not truly an edible food but for those of us who know better, they add that little edge of saltiness that makes Mexican food good. This dish would be fantastic served along some fresh guacamole, a huge bowl of queso (cause, cheese... mmmmm) and some Spanish rice.  Or, if you're feeling really festive, homemade margaritas. I'll take mine on the rocks with salt thankyouverymuch. Ole!


* Slow Cooker Orange Chicken *
This is a lighter version of the traditional dish which typically calls for breaded and fried chicken.  Tender chunks of chicken slow cooked in a savory orange sauce just waiting to be served on a plate of steamed rice. This would be excellent alongside a bag of freshly steamed veggies, too or you could even toss them into your wok for a quick stir fry to serve alongside this bowl of Asian inspired saucy deliciousness. This may warrant spring rolls... and crab rangoon... perhaps some pot stickers.  Okay... let's face it... we need to hit Costco before this so we can just have a feast that would put Chinese New Year celebrations to shame.  But, let's skip the fortune cookies... since... ya know... this is supposed to be healthified and all.


* Queso Chicken & Rice Bake *
Because we love Mexican food, we had to include this delicious, cheesy, Mexican-y concoction for you this week too.  Okay, I'll admit, it's really for me, but, it's for you TOO... maybe a little.  Okay, maybe I just wanted an excuse to make more Mexican food... BUT it's for the greater good.  Work with me here...  because -- CHEESE y'all.  Queso and rice and chicken and yum!  This creamy, cheesy chicken casserole is packed with delicious queso, rice, green chiles (for that extra kick) and a hint of taco seasoning to give it that authentic Mexican flair. The only thing that will make it better would be if you were to invite me to dinner...  and not ask me to do the dishes... or why I went ahead and served myself seconds before anyone else was able to serve themselves firsts. I mean, when queso is involved - - it really IS every man, woman and child for themselves!

Ready, Set, Go!

This week's entrees are:

* Delicious Salmon *

Salmon fillets marinated in a perfectly blended combination of spices with salty soy sauce and sweet brown sugar.  These go from freezer to table quickly. Serve with wild rice and sautéed fresh green beans almondine.


* King Ranch Chicken *

This Tex-Mex casserole reigns king of all others (see what I did there?) and is a staple at any family gathering or potluck.  Why? It never fails to please!  Gooey cheese, tender shreds of chicken, layers of corn tortillas, the zest of the Southwest spice blend mixed with green chilies, bell peppers, diced onions... it has it all.  Personally, I think it's even better the SECOND day -- though good luck having any leftovers!  I love mine served with a side of black beans and some Spanish rice with a big dollop of creamy sour cream on top.  


* Pizza Subs *

Busy moms can't get enough of these stuffed subs! Crispy bread loaves loaded with zesty Italian sausage, plenty of pepperoni and gobs of mozzarella cheese. The ultimate super easy weeknight meal. You can cook them from frozen or thawed for a delicious dinner on-to-go for your entire family! 


* Zesty Slow Cooker Chicken BBQ *

Hearty chicken breasts slow cooked in a zesty sauce and covered with a rich barbecue sauce.  Once they're done cooking, you shred them and serve them on rolls... or you could just grab a fork and eat it right out of the crock pot.  We won't judge.  Toss a bag of crinkle fries in the oven and call it a day!  Or, if you want to embrace your need for more color on your plate, toss together a fresh batch of cole slaw as a side.  Better yet, top your sandwich with some...but don't forget the crinkle fries because... it's just fun to say.  


* Slow Cooker Creamy Ranch Pork Chops with Potatoes *
For those busy night when you need dinner ready but know your schedule is full, enter the busy-mom kitchen workhorse -- the slow cooker! These pork chops and potatoes are swimming in a creamy sauce loaded with good old-fashioned ranch flavor. This would be most excellent with some flaky buttermilk biscuits and a garden salad.

Looking Ahead - Order Now!


Although we are closed next week for Spring Break -- we want to allow you to PLAN AHEAD for your week following the break!  The next menu is live and ready for orders. These entrees will be ready for pick up Thursday, March 23-25. 

And yes, back by popular demand are the Garlic Bacon Chicken Ciabatta Sammies!  Don't let these bad boys pass you by this time.  They are DELICIOUS!  And when I say delicious... I mean... 



But speaking of delicious, we have five entrees for you and your family to enjoy in both full and half-sizes.

This week's entrees are:



* Chicken Pot Pie *



Classic chicken pot pie made with a mixture of chicken breasts, potatoes, peas, and carrots in a homemade white sauce.  Cooks from frozen so it's great for when you've forgotten to thaw something.  Our #1 seller!  No need to serve this with anything except a big tall glass of sweet tea!  Comfort food at its finest.



* Cheesy Stuffed Shells * 



Jumbo pasta shells stuffed with a delicious combination of Italian cheeses including ricotta and mozzarella covered with a flavorful marina sauce and topped with a generous portion of mozzarella because.... cheese!  This is a crowd-pleasing, easy weeknight dinner.  Add a Caesar salad and some garlic knots and I'm sure there will be empty plates all around your dinner table.  



* Slow Cooker Mongolian Beef *



Delicious cuts of beef in a savory, rich brown sauce slow cooked to perfection.  Top with a sprinkling of freshly cut green onions and serve on a bed of steamed or fried rice.  You know, come to think of it this would be awesome served with broccoli, too.  However, broccoli and the slow cooker don't play well together so, if you'd like to go the extra mile... I'd suggest stirring those in just before serving after they've been pre-steamed.


* Garlic Bacon Chicken Ciabatta Sammies * 



Initially, we were going to make these savory chicken subs. Then, we thought we would kick it up a notch with some creamy, soft cheese that would be all melty and delicious.  And THEN we got an inspiration to add some homemade garlic butter to the bread to keep the chicken moist and fantastically melt-in-your-mouth gooder than good!  But how DO you top something that's gooder than good?  Why with BACON, of course -- LITERALLY!  Bacon just takes everything to the next level of yum.  The problem with bacon is that no one wants to share which means that someone will inadvertently wind up with a lesser baconified portion of the sandwich.  I mean, tell me, if you were slicing a giant sub and saw bacon fall out, are you going to just GIVE IT AWAY to someone else?  Heck no!  You're grabbing those bacon bits!  If it comes to bacon, it's every man, woman and child for themselves!  Lesser bacon can lead to complete and total household anarchy.  In order to be peacemakers, we are giving each serving their own cheesy, garlicky, chicken ciabatta roll topped with BACON! You're welcome.  These were a hit for Super Bowl Sunday and they SOLD OUT!  Don't miss yours!


* Greek Chicken * 



These chicken breasts are one of the most versatile entrees to serve... they can be baked, slow cooked, or even grilled... you name it!  Plus, if you love Greek food, this dish, just can't be beat! Chicken breasts seasoned with oregano, garlic, olive oil, lemon and a hint of mint are the perfect anchor for your dinner (see what I did there?)  To kick it to the next level, you know you gotta top this with some Feta!  Cause everything's bettah with Feta!  Couple this with a delicious Greek salad (tomatoes, Feta (see, I TOLD you everything needs Feta!!), red onion, cucumber, kalamala olives seasoned with the same type of base that is on the chicken -- olive oil, garlic, lemon and freshly ground pepper -- if you want the exact recipe, email me!) But, look at this deliciousness... you KNOW you want summa dis!!  Oh... and of course if you want to take this to the NEXT level... make some focaccia bread (I realize, that's Italian, but it's SOO good paired with this meal (or anything, or by itself, because... bread yo!) Just tell your family that you're being multi-cultural.  If they don't like it, take their plate... and put it back in the kitchen... but lick the bread first -- where they can see you do it -- so then it's yours... and you can eat it, too. Cause... bread.. and Greek chicken.  YUMMO!

We're At It Again!


It is time... to peruse next week's menu!  We have five delicious entrees for you and your family to enjoy in both full and half-sizes.

This week's entrees are:



* Chicken Spaghetti *



Just when you thought it was safe to share your entrees with your kids... we bring back this delicious cheezy, ooey, gooey, goodness otherwise known as Chicken Spaghetti and --- I'm sorry but it'll make ya wanna lie to your kids. Not in a bad way, just that there's no leftovers. Why? Because you'll want them. All of them. You deserve them. You work hard. Hearty chunks of skinless, boneless chicken breasts combined with al dente pasta spaghetti and stirred into a creamy base with diced tomatoes and green chile peppers... a hint of garlic. It's just... good.



* Slow Cooker Chicken Cordon Bleu * 



A creamy, delicious classic comfort meal ready to be served over rice or pasta. Instead of stuffed chicken breasts that are breaded, pan fried and covered in sauce, we have layered the components so that they are ready for your slow cooker. This would be ideal served with a side of baked asparagus or roasted root veggies along a slice or three from a hot, fresh French baguette because... well, cordon bleu is French. If you served it with focaccia, well.... you must might as well start some cultural warfare! Play the part! Bon appetit!



* Slow Cooker Beef Tips with Gravy *



Delicious savory mixture of mushroom soup, gravy mix, beef broth, onion and garlic whisked together and placed with a generous portion of beef tips to slow cook to perfection. Serve over egg noodles or mashed potatoes and a crusty French loaf.... you know... just in case you have a little bit of gravy to wipe up.

Who doesn't love the taste of fajitas? But... who really wants to slave over a grill or a skillet waiting for everything to finish after a busy day at work or mom'ing? Or, who wants to smell like one after cooking dinner? Admit it... "fajita" isn't a best seller at the perfume counter! Want the filling without all the fuss? Anchored Blessings has your back! A generous portion of perfectly seasoned chicken with layers of onions and peppers waiting for you to thaw, bake and enjoy!
